Club Red Cooks
The weekend of November 30th was filled with fun for our Club Red members who attended our first Seasonal Cook heart-healthy cooking class. Our chef, Ashley Hightower, showed us how to prepare a perfect meal for entertaining holiday guests, while our nutritionists Mary Lou Perry and Kelli Hughes clued us in as to why these menu items were better choices for our hearts than the traditional, heavy holiday meal. The menu included:
- A crostini with spinach and goat cheese appetizer
- Braised cabbage
- Cumin-cinnamon sweet potato wedges
- Pork tenderloin with sautéed apples and roasted shallots
- And red wine poached pears with vanilla yogurt for dessert.
"Thank you for the delightful evening this last Friday at the cooking class," said Mary, a Club Red member from Charlottesville. "After a long day at work, starting the gathering with a little bit of wine was fabulous. The cooking lesson and food were good too... I've raved all weekend about the fun I had Friday evening."
We had so much fun at our first Seasonal Cook event, we're planning to offer another class in the spring. Stay tuned for more details.
