Crostini with Spinach and Goat Cheese

+ Ingredients

Baguette
Olive oil
Salt

For Spinach

1 tbsp cider vinegar
½ tsp Dijon mustard
½ clove minced garlic
1 tsp maple syrup
1 tbsp walnut oil
2 tbsp extra virgin olive oil
Salt and freshly ground black pepper
Several handfuls baby spinach, washed/dried
Goat cheese- use a kind easy to slice, not crumbly
Dried cranberries

 

+ Directions

Slice baguette into ¼ rounds, brush with olive oil and sprinkle with salt

Bake at 350 degrees until golden, about 10 minutes

For Spinach

Whisk together cider vinegar, Dijon mustard, garlic, maple syrup, walnut oil and extra virgin olive oil to make a vinaigrette.

Toss spinach in vinaigrette.

Assemble crostini: spinach, goat cheese then dried cranberry on top.
