Mini Herbed Pork Tenderloin Sandwiches with Maple-Dijon Sauce

+ Ingredients

15, 1 oz. rolls 

For Pork:

1 lb. pork tenderloin

1 clove garlic, minced

1 T. fresh parsley, chopped

1 t .fresh rosemary, chopped

1 t. fresh thyme, chopped

kosher salt

black pepper, freshly cracked

For Maple-Dijon Sauce:

3 T. maple syrup

3 T. Dijon or other mustard

 

+ Directions
  • Preheat oven to 375 degrees
  • Trim pork of fat and silver skin
  • Rub pork with garlic, herbs, salt and pepper
  • Place on a rimmed baking pan and bake 25 minutes or until it is just barely pink
  • Let cool to room temperature, slice thinly
  • Whisk maple syrup and mustard together
  • Assemble rolls with pork and sauce- may add other ingredients as you wish (i.e. lettuce, tomatoes)
