Red Bliss Potatoes Stuffed with Chive-Garlic Mashed Sweet Potatoes

+ Ingredients

15 red bliss potatoes

1 large or 2 small sweet potatoes, peeled and cut into large chunks

1/3 cup sour cream

2 T. butter

2 T. fresh chives, chopped

1 small clove garlic, minced

¼ t. kosher salt

½ t. black pepper, freshly cracked

 

+ Directions
  • Put all red bliss potatoes into a large pot of cold salted water
  • Bring to a boil and cook until just tender, about 15 minutes
  • Cool, cut in half and scoop out middle
  • Meanwhile- cook sweet potatoes until soft, about 15 minutes, drain
  • Mash sweet potatoes until creamy with sour cream and butter
  • Add garlic, chives, salt and pepper
  • Fill red bliss potato halves with mashed sweet potatoes
  • Warm at 350 in oven just before serving, about 10 minutes

As a diabetic it would be great to see the carb counts in the recipes. All these recipes sound very tasty but I seem to avoid making them not being sure of that carb count really is!
