Dark Chocolate Covered Strawberries

Contributor: Ashley Hightower Makes 4 serving(s) + Ingredients6 oz. fine quality, dark (bittersweet) chocolate 12 ripe strawberries
+ DirectionsLine a baking pan with wax paper, wash and thoroughly dry strawberries. Using a small double boiler (i.e. small bowl over small saucepan) heat chocolate until melted then keep over very low heat. Holding a strawberry by it’s stem, dip it into chocolate until halfway covered then place on wax paper, repeat with all strawberries. Chill at least 30 minutes, serve right from refrigerator or condensation will form. Note: have a heat resistant spatula nearby to scrape chocolate back toward bottom of the bowl.
