Strawberry Mango Sundaes with Toasted Almonds and Coconut

+ Ingredients

2 cups strawberry ice cream

1 mango, diced

1 cup strawberries, sliced

1-2 T. water

1-2 T. sugar

2 T. almonds

2 T. unsweetened cocunut flakes

+ Directions

Preheat oven to 350 degrees.

Spread almongs and coconut onto separate baking sheets. Toast for 5-10 minutes or until each is golden brown.

Meanwhile, heat a small heavy saucepan to medium heat; add strawberries, water and sugar. Let strawberries cook gently for 10 minutes until softened.

Divide ice cream among bowls, then spoon stawberry sauce over. Top with diced mango, almonds and coconut.
