Almond-Encrusted Salmon

Makes 4 serving(s)

+ Ingredients

4, 4 oz. salmon fillets
½ tsp. olive oil
¼ tsp. salt
¼ cup slivered almonds
1 lemon cut into wedges

 

+ Directions

Toast almonds in a 350° oven for about 5 minutes or until just turning golden, cool.

Pulse almonds in food processor until ground coarsely then pulse 1-2 more times (you don’t want them too fine).

Preheat oven to 400°, line a baking pan (jelly roll type pan) with foil.

On a plate, rub salmon fillets with olive oil (I use my hands) then sprinkle with salt.

Spread almond crumbs on another plate then dip oiled/salted side of salmon into crumbs to lightly cover fillet, repeat with remaining pieces of salmon.

Bake 12-15 minutes until salmon is just done; do not over bake!
