Salmon and Herb Pesto

+ Ingredients

4, 4 oz. salmon fillets

1/4 t. kosher salt

1 small clove garlic, minced

1 T toasted pine nuts

1 T parmesan

¾ cup packed basil leaves

¼ cup parsley leaves

1/8 cup tarragon leaves

2 T plus 2 t extra virgin olive oil

1 t fresh lemon juice

+ Directions
  • Preheat oven to 400 degrees, place salmon fillets on a baking sheet lined with foil and sprinkle with salt. Bake about 12 minutes. Alternatively, grill the salmon on high heat, about 4 minutes per side.
  • Meanwhile make pesto. In food processor, grind nuts, garlic and parmesan. Add herbs and lemon juice. While processing drizzle in oil. Season with salt and pepper.
  • As soon as salmon is out of the oven, place fillets on plates, spoon herb pesto over the top of each fillet.
