Tilapia with Cilantro Pesto

Pesto 2 T. chopped roasted peanuts 1 small clove garlic, minced 1/3 cup chopped cilantro Juice of one lime 1/2 jalapeno, seeded, minced 4 T. olive oil Salt
+ DirectionsCombine all pesto ingredients, it will be thick. Bring a large heavy pan to high heat, season tilapia fillets with salt and pepper. Add oil to pan, add fish (pretty side down) then butter. Reduce heat, cook fish 2-3 minutes per side until opaque. Top fish with cilantro pesto. Nutrition Facts:Calories: 347
