Bulgur-Rice Pilaf

+ Ingredients

1/4 cup bulgur

1/3 cup water

2/3 cup short grain brown rice

1/2 T. unsalted butter

1/2 small onion, diced

1 carrot, diced

1 1/3 cups homemade or low-sodium vegetable broth

1/2 cup diced tomatoes

2 T. fresh chives, chopped

+ Directions

Add 1/3 cup water to bulgur in a small bowl, let stand 30 minutes or until water has dissolved.

Meanwhile, bring a heavy saucepan to medium heat. Add butter then add onion and carrot, cover with a lid. Let onion and carrot sweat until transluscent, about 7 minutes.

Add brown rice and stir one minute, then add broth. Stir once, bring to a boil, then reduce heat to a simmer for 45 minutes or until all liquid is absorbed.

Add bulgur, tomatoes and chives to rice. Stir and divide among plates.
