Chick Pea and Vegetable Salad with Olives and Feta

Contributor: Ashley East, Dinner at Home Makes 4 serving(s) + Ingredients1 can chick peas, drained and rinsed well 1 roasted red pepper, diced 1 small cucumber, peeled, seeded and diced 2 oz. feta cheese, crumbled 6 pitted Kalamata olives, minced Juice of ½ lemon or 2 T red wine vinegar 2 T extra virgin olive oil ¼ cup chopped parsley 1 t dried oregano 1/8-1/4 cup minced red onion, as desired 1 small clove garlic, minced Handful of mixed greens *if it’s summer add fresh tomatoes! + Directions
Add all ingredients
together and mix well. To serve divide mixed greens among plates and spoon
mixture over greens.
