Quinoa Pilaf with Dried Fruit and Nuts

Makes 4 serving(s)

+ Ingredients

1 T. extra virgin olive oil

½ yellow onion, minced

2 cloves garlic, minced

2/3 cup red quinoa, rinsed

4-5 dried apricots, finely chopped

¼ cup dried currants

¼ cup blanched, toasted almonds, finely chopped

2 green onions, green parts only, thinly sliced

1 t. lemon zest

¼ t. kosher or sea salt

freshly cracked pepper

+ Directions
  • Bring a shallow, heavy saucepan to medium heat. Add olive oil then add onion, cover and cook for about 5 minutes. Add garlic and cook 1 minute further.
  • Add quinoa, stir for one minute then add 1 1/3 cup water, cover and simmer about 15 minutes or until all liquid has been absorbed and quinoa is fully cooked.
  • Add apricots, currants, almonds, green onions and lemon zest. Stir well, season with salt and pepper.
