Red Quinoa Pilaf

Makes 4 serving(s)

+ Ingredients

1 cup red quinoa, well rinsed and drained of excess liquid

1 ¾ cups water

1 T extra virgin olive oil

1 small shallot, minced

1 carrot, peeled and small diced

1 rib celery, minced

1 clove garlic, minced

¼ t. salt

2 T fresh parsley, chopped

¼ cup slivered almonds, toasted

+ Directions
  • Bring a saucepan with lid to medium heat. Add olive oil then add shallot, carrot, celery and garlic. Cook 3-4 minutes until vegetables become tender
  • Add quinoa and stir to coat with oil and vegetables. Add water and salt, bring to a boil then reduce to a simmer and cover. Cook for 15-20 minutes or until all water is absorbed.
  • Stir in parsley and almonds at the last minute. Serve immediately.
