Roasted Rutabaga, Butternut Squash and Green Beans

Makes 4 serving(s)

+ Ingredients

1 small butternut squash, peeled and cut into ½ inch pieces

1 large rutabaga, peeled and cut into ½ inch pieces

1 small red onion, cut into ½ inch pieces

¼ lb. fresh green beans, washed and trimmed

2 t. extra virgin olive oil

4 sprigs of thyme, leaves removed

¼ t. salt

freshly ground black pepper

 

+ Directions
  1. Preheat oven to 425 degrees. Add all vegetables to a large bowl and toss with oil, salt and pepper.
  2. Roast for 25-30 minutes or until all vegetables are tender, stir once or twice. Remove from oven and stir in thyme leaves.
