Sweet Potato Hash

+ Ingredients

4 medium sized sweet potatoes, peeled or unpeeled and diced

1 small yellow onion, minced

1 tablespoon extra virgin olive oil

ΒΌ teaspoon kosher salt

1/8 teaspoon nutmeg

1/8 teaspoon cayenne

Freshly cracked black pepper to taste

+ Directions
  • Bring a large pot of water to a boil. Add diced potatoes and cook until just tender, about 10-15 minutes. Drain well.
  • Bring a large non-stick pan to medium-high heat then add olive oil.
  • Immediately add onion and cook 2-3 minutes until becoming soft. Add diced potatoes and cook about 4-5 more minutes.
  • Season with salt, pepper and spices.
